Well, there’s no ‘impastas’ here! Our chewy, delicious noodles are custom made for us by Sun Noodle. So what makes Sun Noodle so special, besides being the go-to supplier for David Chang, Ivan Orkin, and Iron Chef Morimoto?

For starters, they’re a family-owned business that has specialized in developing and producing Japanese-style noodles since the 1980s. Founded in Honolulu, Hawaii by Hidehito Uki, Sun Noodle has scaled up from a small ‘mom and pop’ local supplier into an international powerhouse trusted by many of the great names in the ramen scene. As the Uki family grew, so too did the business: Hidehito’s son Kenshiro now runs operations on America’s East Coast and is both our supplier and dear friend.

Every bowl of ramen at Umamido is lovingly crafted with homemade broths and the best-quality meat and vegetables we can find. And at its heart: Sun Noodles.
