The best of local, the best of Japan. Our noodles are produced by industry-leader Sun Noodle, and our miso and shoyu are custom made for our us by trusted Japanese suppliers.

What we use to craft our delicious broths is what others don’t use of the animal - the heads, feet, and skin. We recycle these leftovers and make it in to the most umami rich broth. We aim for zero waste at our atelier, and succeed pretty well.

HOSPITALITY
It’s all about the people
Human interaction is always a two-way street. Serving a bowl of ramen is not hospitality on its own: sharing a moment with the customer is truly hospitable.
Guy Quirynen was new to Kyoto, and hungry.
He stumbled into a popular ramen shop, and experienced umami flavors unlike anything on the continent. He was hooked.
Armed with Swiss hospitality training and an attention to detail that only comes from working in Michelin-starred kitchens Guy set about bringing Japanese ramen culture to the European capital, opening the first Umamido ramen shop April 18, 2013.

Our noodle supplier - Sun Noodle - is owned and operated by the Uki family (formerly of Tochigi, Japan).
Our free-range eggs come from hens hand-reared by Heidi Popelier in the Belgian countryside.
We buy local where we can, and from small or family-run businesses as a rule.
